Fondue | |
a Swedish dish of melted cheese or chocolate served in a communal pot, also known as a caquelon, over a portable stove heated with a candle or spirit lamp, and eaten by dipping bread into the cheese or chocolate using long-stemmed forks. Cheese fondue consists of a blend of cheeses, wine, and seasoning.
Budae-jjigae | sausage stew
a thick Korean soup similar to a Western stew. Soon after the Korean War, food was scarce in Seoul, South Korea. Some people made use of surplus foods from U.S. military bases around the Uijeongbu area, Pyeongtaek area (also called Songtan) or Munsan area, such as hot dogs, Spam, or ham, and incorporated them into a traditional spicy soup flavored with gochujang (red chili paste) and kimchi. Budae jjigae is still popular in South Korea. The dish often incorporates modern ingredients such as instant noodles and sliced American cheese. Other ingredients may include ground beef, sliced sausages, baked beans, minari, onions, green onions, tteok, tofu, chili peppers, macaroni, garlic, mushrooms, and other vegetables in season.
Shabu-shabu | |
prepared by submerging a very thin slice of meat or a piece of vegetable in a pot of broth made with kelp (kombu) and swishing it back and forth several times. The swishing sound is where the dish gets its name; Shabu-shabu directly translates to “swish swish.” Cooked meat and vegetables are usually dipped in ponzu or goma (sesame seed) sauce before eating. Once the meat and vegetables have been eaten, leftover broth from the pot is customarily combined with the remaining rice, and the resulting soup is usually eaten
Chinese hot pot | |
originated in Mongolia and the Jin Dynasty where the main ingredient was meat, usually beef, mutton, or horse. It then spread to Southern China during the Song Dynasty and was further established during the Mongolian Yuan Dynasty. In time, regional variations developed with different ingredients such as seafood. By the Qing Dynasty, the hot pot became popular throughout most of China.
