Green Chile | Anaheim
One of the most popular chiles. Its mildness accounts for its appeal to people who dont like the hotter chile varieties. We add this chile to tomatillos along with spices to make our special salsa verde.
Red Chile
A green chile ripened and dried. It is smoother-skinned than most dried red chiles and is often strung in beautiful ristras. Its pungent flavor helps to make our tasty red sauce.
Poblano Chile
A very attractive chile in shape and flavor. Shaped like a Valentine heart, it ranges from mild to medium hot with a full, distinct, pleasant taste. It is used fresh to make our flavor filled chile rellenos.
Ancho Chile
A dried poblano. It is widely grown in Mexico and California, thriving there as it does nowhere else. Ancho are sweet with something of an apple flavor and are a key ingredient in our special Ancho BBQ sauce.
Jalapeño Chile
The best known chile, most often used when it is green and mature. It is a very popular medium to hot chile. We slice jalapeños thin for our famous Ancho Nachos!
