STRAWBERRY PIE | |
Prepare a 9″ pie shell. Pick over and hull 4 cups of fresh strawberries. Combine: 2/3 to 1 cup or more sugar (according to the acidity of the fruit) 4 Tbsp. flour 2 tsp. quick cooking tapioca 1 1/2 Tbsp. lemon juice 1/2 tsp. cinnamon Sprinkle these ingredients over the berries and stir them gently until they are well blended. Pour them into the pie crust. Dot them with 1 Tbsp. butter. Permit them to stand for 15 minutes. Cover them, if desired, with a top crust or with a Lattice of Pastry. Bake the pie at 450 degrees for 10 minutes. Reduce the heat to 350 degrees. Bake the pie until the crust is golden brown (for about 40 minutes). | |

2 eggs unbeaten 1/2 cup corn syrup 1 cup sugar Mix eggs, syrup, sugar and butter together. Add pecans. Put in unbaked pie shell and bake 30 to 45 minutes in a 350 degree oven. | |
