Fresh, topped with a smooth tomato sauce, which went perfectly with green beans, hinting of bacon, and rich macaroni and cheese. Black-eyed peas hit that perfect balance of good body and tenderness, but the collard greens seemed scorched. Broccoli-rice casserole could have used more and fresher vegetable input.
